Carefully remove the skillet from the oven and place over medium-high heat on top of the stove. Add the ghee or oil and the breasts, skin-side down, and cook until the skin is crisp and golden, about 5 minutes. Turn them over, spoon a thin layer of the remaining marinade over the skin, return to the oven, and bake until the breasts are just cooked through and an instant-read thermometer reads close to 165°F, 15 to 17 minutes, or longer, depending on size and how thick they are. Remove the meat in one piece from the bones, return to the skillet flesh-side down, and cook on top of the stove over medium-high heat for 1 to 2 minutes or until done.
